OmPodi

Omapodi  is a South Indian snacks, prepared using besan and rice flour.  We add omam or Ajwain to it to get a fine flavour.  Omam is very good  for health.

Ingredients
Besan – 2 cups
Rice flour – 1 cup
Omam -15 gms (powdered)grind it in Mixie
Salt – 1  tsp ( to taste)
Asafoetida – 1/2 tsp
Butter or ghee – 1 tbl spoon
Oil – for deep frying

METHOD:
  • Mix besan , rice flour, omam powder, butter, asafoetida &  salt with  water and make it into a thick paste like  batter but a soft one.
  • Heat the oil in the kadai.Test how hot it is by dropping a pinch of dough into it – if it sinks, the oil hasn’t become hot enough. If the dough springs to the top with bubbles all around it, then the oil is just ready.
  • In your muruku press place the oma podi plate and load
  • the dough and press it directly into the hot oil. Fry it untill it is golden yellow and crispy.
  • Crispy omapodi  is ready. Allow it to cool and store it in an air tight container.
  • We can make little variations to make it taste different.
  • Along with omam powder add 1 tsp of  chilly powder and prepare the batter.

Mambazha Pulissery/ Ripe Mango curd curry

Mambazha Pulissery 

Mambazha Pulissery an authentic kerala style ripe mango curry.Ripe mangoes enhances the taste,even pulissery can be made with ripe plantain,pappaya,cucumber,pineapple .This puliseery is one of my favourites from childhood.
 My Amma is Very Very Good for her style of mambazha pulissery This is her recipe , sour yogurt and sweet & sour mangoes makes this dish delicious.Mango is rich in vitamin A,E,iron,antioxidant ,anticancer abilities and helps to prevent heart diseases.Yogurt has calcium,beneficial to bone &teeth and boost immune system.

Cook Ripe Mango
Ingredients:

Ripe mangoes 1 no.
Turmeric powder 1/4tsp
Water 1/2cup
Red chilly powder 1/2tsp
Salt to taste

Grind to paste...

Grated coconut -1/2cup
Jeera /Cumin- 1/2tsp
Curry leaves 4-5
Green chilles-2

Add Grind coconut and Curd
Seasoning...
Oil 1tsp
Mustard seeds 1/2tsp
Red chilly 3nos
Fenugreek seeds 1/2tsp
Curry leaves

Method:

  • Cut mangoes into pieces and boil with water,turmeric powder,green chillies,salt,red chillipowder.Cook till mangoes are well cooked and can be mashed.
  • Grind coconut and cumin  into a fine paste and add to the boiling mangoes.Boil for few min .Turnoff the flame.
  • Whip yogurt to smooth and add to the boiled mangoes with enough salt.
  • Heat oil in another pan,add mustard seeds.when it pops up,add fenugreek seeds,red chillies,curry leaves.
  • Add seasonings to pulissery.
  • Serve with rice.

BitterGuard pakoda/பாவக்காய் பகோடா

Bitter gourd is cosidered as a good medicine for diabetic patients.this also helps to cure blood disorders and eye problems.
this contains more beta-carotene than broccoli,more calcium then spinach and more potassium than banana.
I love to crunch this crispy pakoda made of pavakka........
pakoda will be liked by all as there is hardly any bitter taste after cooking. ...






INGREDIENTS:


Bittergourd - 2 long ones
Besan / Channadal flour - 1 cups
Riceflour-1/2 cup
Chilli powder - 3 tbsps
Turmeric
Asfotedia/hing
Salt to taste




PREPARATION :

  • Chopped bittergourds to small pieces and add chilli powder,turmeric and salt soak it for 30 minutes
  • In a big vessel , mix pavakka ,floursand little asfotedia
  • Add sufficient water and mix them as per the required proportion.
  • Heat oil for deep frying in a heavy bottomed vessel . Once hot, drop mixture to make pakodas.
  • Slowly cook Crispy and tasty Pavakkai pakoda is ready

  • The bitter gourd pakoda goes very well with rasam and any kind of rice.
