Chicken kola urandai /Minced Chicken balls

Chicken Kola urundai/Minced Chicken ,Photo

Ingredients:


Grounded chicken - 1/2 kg
Onion-1small
Fennel seeds - 1 tsp
Coriander seeds-1/2tsp
Gingergarlic paste-1tsp
Green chili - 4 or 5
Kasa Kasa (poppy seeds) - 1/2 tsp
Pepper powder
Cashew - 5
Salt - 1/2 tsp
Egg - 1
Breadcrumbs - 5 tsp
Oil - for fry

Method:


Chicken Kola Urundai
  • Heat the 1 tsp oil in kadai add fennel seedsadd onion saute well slighty brown add,  ginger, garlicpaste.Green chili, kasa kasa, cashew saute for 5 minutes and grind it as powder with 2 tsp of grounded chicken
  • Boil the grounded chicken in water with 1/4 tsp of turmeric powder, little gingergarlic paste,pepper powder and salt
  • Beat the egg with little salt and pepper powderkeep it ready
  • Filter the water and smash the chicken in hand And  mix the grinded powder with boiled chicken and make it as doughAnd make small balls
  •  Dip the balls in egg And roll over the bread crumbs 
  • Fry the balls in Oil

Masala/Dal/Paruppu Vadai

Masala/Dal/Paruppu Vadai is cooked at home during festivals and is mostly prepared with Bengal gram . Onion and garlic is also added to make it more tasty (those who don’t like onion, garlic they can avoid using in this).

Ingredients
Bengal gram/kadalai paruppu – 2 cup
Onion – 15 no
Green chilli – 5 no
Fennel seed – 2 tea spoon
Garlic – 4 cloves
Ginger – small piece
Coriander and curry leaves/pudina – few
Salt – as per taste
Oil – for deep frying vadai

Method

  • Soak Bengal gram in sufficient water for 4 hours minimum; wash, drain and keep aside; finely chop onion, green chilli, coriander and curry leaves.
  • In a mixi jar add green chilli, half of fennel seed, salt and run the mixer for few seconds; now add ginger, garlic and run the mixi for few seconds; do not use water to grind.
  • Keep a handful of soaked Bengal gram separately for later use and add the remaining in the same mixi jar; grind it to a coarse paste without water and put it in a bowl.I
  • In the same bowl, add separately kept handful of soaked dal, chopped onion, green chilli, coriander/curry leaves, remaining fennel seeds, turmeric and red chilli powder; mix gently
  • Heat oil in a pan; when hot take with wet hands small amount of ground mix; shape it like a round, thick, reduce flame to low and put it in hot oil carefully
  • You can add more vadais as per the capacity of the oil in the pan; cook in low/moderate flame for few minutes till vada is crisp; the surface also turns golden colour; turn sides in between
  • Keep fried vada on kitchen tissue for few minutes to absorb excess oil.

Plaintain Chips

Plaintain Chips is a simple snack, is a must served one for the all the ocassion in Kerala.This salty crunchy yummy snack...my and my hubby all time Favorite.....

When Onam comes my Grandpa used to call the men to make this Uperi in Bulk so that everyone can take home the remaining ........Miss the golden Days



Ingredients :


Raw Banana(Plantain)/Nenthran Kaya : 4 nos
Peel the skin
Turmeric powder : 1/2 tsp
Salt water :1 tsp in 1/2 cup water
Cooking Oil for frying i used canola
 (For more taste use Coconut oil)





Method :

  • In a large pan add water and turmeric powder and keep aside.
  • Cut into  thin pieces
  • Peel the outer skin of the bananas and immerse them in the turmeric water for 10-20 minutes. (Note :This will remove the stickiness of plantain and preserve the color)
  • Slice it into thin round pieces. You can use a slicer or a knife, just ensure that the pieces are thin
  • Heat the oil in a deep frying pan on medium heat.(Note: It should neither be too smoky nor dull).
  • Slide the sliced bananas into hot oil without overcrowding them.
  • Occasionally give stir to flip them and keep them from sticking together.
  • Fry for another 2 minutes or until golden brown and remove excess oil by spreading on paper tissue.Sprinkle some salt .........
  • Fry It
  • Store it in an airtight container when they are cooled.



Another Method of adding salt: When it is half done sprinkle the salt water and close the pot with a lid.(this will prevent splashing)and remove the lid after a couple of minutes

Banana blossom Cutlet / வாழைப்பூ கட்லெட்

Banana Flower (Vazhai Poo in Tamil), which may also be called banana blossom,
is used as a food itemVazhai Poo vadai,Vazhai Poo poriyal in India, especially in South India. It has lot of medicinal values.
It is considered as a blood purifying item and it is effective in curing menstrual disorders
It also increases hemoglobin cell levels in the blood.
Due to time consuming job involved in cooking this flower, most people do not cook it often.
Today i am making Vazhai PooCutlet

INGREDIENTS:
Banana flower -1 small
Potato- 2 medium sized
Green chilly 3, finelychopped
Onion 1/4 cup,finelychopped
Ginger garlic paste 1 1/2 tbsp
Garam masala powder1/4 tsp
Coriander powder1/4 tsp
Fennel seeds -1/4 tsp
Red chilly powder-1/4 tsp
Turmeric powder1/2 tsp
Salt as needed
Bread crumbs 2 cups ( toast 4 slices of bread and powder it)
Egg 1
Oil- as needed



    Method:

    • Boil the potatoes with little salt in it.Then remove the skin of potato and mash it well . Keep it aside.
    • In a bowl, slightly beat an egg and keep it aside.
    • Clean banana flower/Vazhapoo and chop finely the edible,soft inner part.
    • Wash the chopped banana flower thoroughly and add 2 tbsp of oil and a pinch of turmeric powder to it.
    • Mix it good.Adding oil will remove all the stickiness and turmeric powder will prevent the discoloration.
    • Now in a medium heat pan, add a tbsp of oil and saute onions and green chilly.
    • Next add the ginger garlic paste and saute till the raw smell goes.
    • Then add the banana flower.Add needed salt and cook it in low flame.
    • Next add turmeric powder, red chilly powder,coriander powder and garam masala powder.
    • Saute till the raw smell of masala goes.
    • Next add the mashed potatoes.
    • Check the seasoning and mix it good.
    • Transfer this to a plate and then add 3 tbsp of bread crumbs to it and mix it good.(if needed )
    • Adding bread crumbs to the potato mixture will help removing any moisture present in it.
    • Make small patties with desired shape(round,oval or heart shape) using the potato mixture.
    • Dip the patties in egg(maida mixture) and then in bread crumbs.
    • Then either deep fry it or shallow fry it in a pan with needed oil.
    • Once it is slightly golden brown through out,transfer it to a plate.our tasty and healthy vazhaipoo cutlet is ready
    • Serve with tomato ketchup.

    Note: Maida Mixtureis nothing but Mixture of maida and water(this is for veges)

    Gobi Manchurian

    Gobi Manchurian


    This is one of the famous starters in India and it is delicious, spicy and dry. It is made of Cauliflower. ... Gobi Manchurian dry .... This is my husbands favorite                                               

                                                                                        Things Needed:


    Cauliflower cut into bite sized Florets -1
    Gram Flour (Besan) - ½ cup
    Maida-1/4 tsp
    Ginger grated - 1 tsp
    Garlic grated -1tsp
    Corn Flour - ½ cup
    Ginger Garlic Paste - 1 tsp
    Green Chilli Paste - 1 tsp
    Soya sauce: 1 tsp for Flour Paste, 2 tbsp for Sauce
    Oil for frying
    Salt to taste
    Onion finely chopped - 1 small
    Bell pepepper -Chopped                                                                                     
    Tomato Ketchup - 4 tsp
    Chopped Cilantro (Coriander Leaves)
     Spring Onions for garnishing




    Method:
    • Cook Cauliflower for about 5 minutes until tender in pan of boiling Water. Drain, pat dry with a towel and set aside.


    • Next mix together Gram Flour, Corn Flour, Ginger Garlic Paste, Chilli Paste, Soya Sauce and Salt with some Water to form a thick Batter. (bajji batter)


    • Heat Oil in a pan on medium heat. Dip each Cauliflower Floret in the Batter and fry till it becomes crispy. Lay them on a tissue paper to drain the excess Oil.


    • Heat a teaspoon of Oil in a pan, first add grated ginger and garlic then sauté the Onions then add bell pepper.


    • Next add Tomato Ketchup and Soya Sauce to the Onions and mix well (add 1/3 cup of Water if you want to make it wet version)


    • Add the fried Cauliflower and mix well until it's coated with the Sauce.


    Garnish with Cilantro or Spring Onions and serve hot!
